Here’s what I eat in a day when I am at the offi Here’s what I eat in a day when I am at the office and want to lose a few pounds -

I have been IN the office almost everyday for months. Believe it or not, I do enjoy it. I miss three things though, my leggings, my dog, and my access to the kitchen. 
Work has also been a bit more stressful than usual and it’s giving me the “OK” to just eat whatever I want or to skip meals and binge on garbage later. Can you relate? Do you have an F it button too? 
Well, my chin feels like it’s touching my neck so I need to clean it up plus I’m in a headspace where it’s fun to eat good meals so I’m riding that wave while motivation is decent and hoping the habit will be reformed before motivation wains. 
Here’s what I ate today in the office to start cleaning up my nutrition and lose 5 pounds. Truthfully, this was a baby step  because I had carbs at snack, lunch, and dinner. Tomorrow I will cut the carbs at lunch or dinner. This will speed up reduction of inflammation, bloat, and weight loss. 
Breakfast - cafe latte with coconut milk (it’s quite filling and warm + cozy) 
Snack - coconut milk yogurt with granola and chocolate chips 
Lunch - Whole Foods prepared General Tso’s Chicken with Rice and Broccoli 
Dinner - Turkey and bacon stuffed pita and an apple 
Dessert - I ate 2 or 3 Unreal coconut bites throughout the day - they’re like a healthier mound bar 
*I know, your cauliflower is my coconut :) 
If you want to speed up the weight loss process skip the pita at dinner or cut the rice at lunch in this menu. It will make a big difference. Make sure you’re drinking water and in general QUIT the snacking.

You’re busy and don’t have time to cook let alone prep a ton of food but you also have goals. Here are a few recipes you can whip up this weekend for the week that will keep you on plan and best of all, happy because they are delicious! 
Carrot Bake: 
One bag of carrots (as many as you can fit into the blender, mine fits a whole bag usually)⁣⁣
One cup oats ⁣⁣
One dozen eggs⁣⁣
3 tsp cinnamon ⁣⁣
1 tsp PP spice or nutmeg⁣⁣
2 tsp baking powder⁣⁣
⁣⁣
Pour into a prepared glass baking dish and bake on 350 for 40 minutes. 
Top with PB and maple syrup ⁣⁣
Oatmeal protein balls: 
1 cup old-fashioned oats
2/3 cup toasted shredded coconut (sweetened or unsweetened)
1/2 cup creamy peanut butter
1/2 cup ground flaxseed
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey
1 teaspoon vanilla extract
Stir everything together.  Stir all ingredients together in a large mixing bowl until thoroughly combined. Chill. Cover the mixing bowl and chill in the refrigerator for 1-2 hours, or until the mixture is chilled. Roll mixture into 1-inch balls.
Healthier Chicken salad: 
3 cups cooked chicken, chopped or shredded
2 stalks celery, diced
1 cup red grapes, halved
1/2 cup thinly sliced almonds
3 green onions, sliced
3/4 cup plain Greek yogurt
1 Tbsp Dijon mustard
3 Tbsp fresh lemon juice
1/2 tsp celery seed
1 tsp salt
1/2 tsp cracked black pepper
In a large bowl, mix together chicken, celery, grapes, almonds, green onions and parsley.
In a separate bowl, whisk together Greek yogurt, dijon mustard, lemon juice, celery seed and salt/pepper.  Drizzle the dressing all over the chicken mixture and mix well until all combined.
Cover and store in the refrigerator until ready to enjoy.  Serve with crackers, on slices of bread or in a wrap, or serve on lettuce as a salad

Try this low carb, low sugar chocolate peanut butter cup today 👇🏻
Ingredients
12 muffin liners
¼ cup semisweet (or dark) chocolate chips
2 scoops Chocolate Shakeology
½ cup 100% pumpkin puree
6 tsp. all-natural smooth peanut butter
Instructions
Prepare 12 mini muffin cups by lining with muffin papers.
Place chocolate chips in microwave-safe container. Microwave on 50% power for 30 seconds; stir; microwave for an additional 30 to 45 seconds or until just melted. Do not overcook. Set aside.
Place Shakeology, peanut butter, and pumpkin in a food processor. Pulse until a dough forms.
Divide dough into 12 small balls; place each ball in a muffin cup. Press dough down into a flat disk with a depression in the middle. Place ½ tsp. peanut butter in each depression.
Drizzle melted chocolate evenly over each peanut butter cup; spread to create a thin chocolate layer on top.
Freeze for 30 minutes, or until chocolate hardens. Serve immediately, or store frozen in an airtight container for up to 1 month. If frozen, let sit out at room temperature for 10 minutes before serving.

Here are 3 low carb crock pot recipes to try this week to help you get started! 
1. Slow Cooker Chicken Alfredo
Ingredients:
4 boneless, skinless chicken breasts
1 cup heavy cream
1 cup Parmesan cheese, grated
1 cup chicken broth
4 cloves garlic, minced
Salt and pepper to taste
Fresh parsley (optional)
Instructions:
Place chicken breasts in the crockpot and season with salt, pepper, and garlic.
Add the chicken broth and cook on low for 4-5 hours or until the chicken is tender.
Remove chicken, shred it, then return to the crockpot.
Stir in the heavy cream and Parmesan cheese. Cook for another 30 minutes until the sauce thickens.
Garnish with parsley if desired. Serve over zucchini noodles or steamed broccoli.
2. Slow Cooker Beef & Broccoli
Ingredients:
1 lb beef flank steak, sliced thinly
2 cups broccoli florets
1/2 cup soy sauce (or coconut aminos for a lower carb version)
1/4 cup beef broth
1/4 cup brown sugar substitute (like Swerve or monk fruit)
3 garlic cloves, minced
1 tsp ginger, minced
1 tbsp sesame oil
Instructions:
Place sliced beef, soy sauce, beef broth, brown sugar substitute, garlic, and ginger in the crockpot.
Cook on low for 4-5 hours until the beef is tender.
In the last 30 minutes, add the broccoli and sesame oil to cook until broccoli is tender.
Serve over cauliflower rice.
3. Slow Cooker Buffalo Chicken
Ingredients:
4 boneless, skinless chicken breasts
1 cup hot sauce (like Frank’s RedHot)
2 tbsp butter
1/2 cup chicken broth
1/2 tsp garlic powder
1/2 tsp onion powder
Ranch dressing (optional)
Instructions:
Place the chicken breasts, hot sauce, butter, chicken broth, garlic powder, and onion powder in the crockpot.
Cook on low for 4-5 hours, until chicken is tender.
Shred the chicken and stir it back into the sauce.
Serve over lettuce wraps or alongside celery and blue cheese/ranch dressing.

Biggest misconceptions I had about losing weight a Biggest misconceptions I had about losing weight after 40 stemmed way back to the beginning. Diets. You see, if you’re over 40 like me, you also grew up in the diet era. Every diet you could think of from pills to restriction to low fat - I did it all. 
I assumed that losing weight and targeting belly fat after 40 would require something similar - 
1. A serious diet, where I would be restricted forever 
2. Being perfect and never “cheating” 
3. Completely avoiding certain food groups
4. Intense and frequent exercise 
When I started eating foods that reduced inflammation and supported my gut health and stopped focusing on intense exercise and constant cardio I realized it didn’t have to be this way.

Healthy Chicken Enchiladas + Comment 𝐌𝐄𝐀𝐋 𝐏𝐋𝐀𝐍 and I’ll send you a week of anti-inflammatory meals to support your weight loss journey. 
You’re a busy working mom over 40 + you want to burn belly fat and find your abs. Start with nutrition.Try this family favorite and start your journey towards repairing your metabolism and turning your body into a fat burning machine! 
Here’s what you need: 
2 lbs chicken breast, 1½ cups of it cooked and shredded for enchiladas - save the rest
1 cup low-sodium organic chicken broth
1 tsp. unflavored gelatin
1 Tbsp. olive oil
1 cup chopped onion
4 cloves garlic, finely chopped
½ tsp. sea salt (or Himalayan salt)
2 tbsp taco seasoning (low sodium)
1 cup all-natural tomato puree
2 Tbsp. cornstarch (preferably GMO-free)
+ 2 Tbsp. water (combine to makeca slurry)
4 (6-inch) corn tortillas
½ cup shredded cheddar-jack cheese
Put 2 lbs of chicken breast in your crock pot and sprinkle 2 packets of low sodium taco seasoning over the top. Cover with chicken broth until all pieces are submerged. Cook on low for 8 hrs or high for 4 hrs. 
Sprinkle broth with gelatin. Set aside.
Heat oil in medium nonstick skillet over medium-high heat until fragrant.
Add onion; cook, stirring frequently, for 3 to 5 minutes, or until onion is translucent.
Add garlic; cook, stirring frequently, for 1 minute.
Add salt, taco seasoning, tomato puree, and broth. Bring to a boil, stirring frequently. Reduce heat to medium-low; gently boil, stirring occasionally, for 5 minutes.
Add cornstarch slurry; cook, stirring frequently, for 1 minute, or until thickened.
Combine 2⁄3 cup sauce with chicken in a medium bowl; mix well. Set aside.
Preheat oven to 425º F.
Place 2⁄3 cup sauce in the bottom of 9 x 9-inch casserole pan. Set aside.
Heat medium skillet over medium-high heat.
Cook tortillas for 10 seconds on each side. Set aside.
Place ½ Red container of chicken and sauce mixture (1½ oz.) on each tortilla; roll.
Place each rolled tortilla, seam-side down, in prepared pan. Top with remaining sauce. Sprinkle each tortilla with ½ blue container cheddar-jack cheese (approx. 2 Tbsp.).
Bake for 10 to 12 minutes, or until cheese is melted and sauce is bubbling.

I am a busy, over 40, working mom of 3 and here’s what l would focus on this week if you want to lose 10lbs this month without counting calories, spending hours at the gym, or sacrificing good food or desserts.
When you work all day and go directly to your kids activities after school it can feel exhausting and overwhelming to even consider taking on a healthier lifestyle to lose those unwanted pounds that might have creeped up. 
You don’t know what to eat or even where to start.
Don’t worry, it doesn’t have to be this way. With a few small tweaks you can stat shifting your body from stressed out and a professional storer of belly fat to a fat burning machine with energy and a zest for life again!
This week focus on - 
1. Getting 30g of protein at every meal 
2. Eating 3 squares a day without snacking
3. Hanging up your running shoes and lift heavy weight 3-4x for 20 to 30 min
4. Cutting out alcohol and added sugar
Yes, there are additional things you could do to speed up the weight loss process but I don’t want to give you too many assignments to quickly so just give these a shot. Report back end of week and let me know how you feel and if you lost 2-2.5lbs or the start of your 10lb weight loss in 4 weeks. My guess is, if you actually do this you’ll lose more like 3 or 4 lbs.

This might now be one of my favorite ways to get m This might now be one of my favorite ways to get my superfoods and protein in first thing in the morning. This bowl is incredible and has 22g of protein and no added sugar (as long as you get the right chocolate chips). 
To make it all you need to do is blend: 
1 medium, frozen banana (chunks work best)
½ cup of coconut milk (add more if necessary to blend) 
1 scoop 0g added sugar chocolate vegan Shakeology 
2 tbsp PB2
Put the perfect mixture in a bowl and top with your faves! Mine are a bit more banana, mini no sugar added chocolate chips, and coconut flakes. It’s so good, you have to try it.

If you’re a working mom you know that it’s always busy but back to school time is especially busy. Keeping meals super simple is what has helped me and my clients finally be successful at losing weight, burning belly fat after 40, and getting our confidence and energy back. 
In our 20s and 30s it was all about fitness to lose weight. But in our 40s we need to shift to nutrition and the right kind of workouts. Burning fat isn’t about eating less and working out more. It’s eating the right things and do the right kind of exercise. 
I am also trying to choose higher quality foods like organic, hormone free meats, getting protein at every meal, and using glass instead of plastic to reduce microplastics. Keeping meals simple also helps the shopping process because you’re just grabbing a few high quality products and dinner is taken care of. 
This week we hit up Trader Joes for our meats and veggies and then Target for some Kevin’s chicken because… I’m obsessed. 
We’re eating: 
- Ground beef tacos with peppers and onions + carb friendly tortillas and low sodium taco seasoning 
- Filet and vericot verts (sounds so fancy but it’s so easy) 
- Grilled chicken breast with a side of roasted carrots
- Jicama sticks to dip in guacamole / Fresh fruit for snacks and sides
- And Kevin’s chicken of course! 
- Oh and grabbed some fun pizzas for the kids ;)
I’m in my eating for health and fat burn + have no time era so we’re grabbing quality foods and putting together a protein, a veggie, and a side here and there. The food is delicious and because it’s high protein you are fuller longer and don’t need “snacks”.

EASY, HEALTHY WEEKNIGHT CHICKEN SALAD!! My toxic t EASY, HEALTHY WEEKNIGHT CHICKEN SALAD!!
My toxic trait is that I never measure anything when cooking 😆 it drives my husband crazy! 
But even without measuring this chicken salad is amazing and it’s mayo free! It’s not quite gut protocol friendly for the early stages because of the Greek yogurt but this definitely needs to go in your rotation.
Just grab a rotisserie chicken and shred the chicken
Add apples and you can throw in grapes, celery, and whatever else you like
Make the dressing by combining:
1/2 cup plain Greek yogurt 
3tbsp Dijon mustard 
3tbsp raw honey
3 tbsp rice vinegar
Mix together and slowly pour while whisking 1/4 cup olive oil
Pour on the chicken mixture but not too much! You can always add but you can’t take it out!

This week we’re eating:
👉🏻 Superfood shakes
👉🏻 high-protein overnight oats with bananas
👉🏻 ground turkey, sweet potato skillet 
👉🏻 And beef tacos, Kevin’s chicken with veggies, and chicken salad made from a rotisserie chicken
We’re focused on cooked veggies as much as possible vs. raw salads to support the digestive process. We’re also going out of town this weekend so making sure we don’t over shop or over prep and waste food.

3 tbsp cacao powder

I’m a working mom of 3 with a totally erratic schedule whether I’m traveling, going in to the office, running kids to activities or working from home. Forever and ever, I used my busy schedule as an excuse not to workout or eat well and not feeling well at all. 
After 9 years of being a working mom living off pre-packaged foods, coffee, and office candy I was exhausted, a super fluffy belly, and had major brain fog. I felt a bit overwhelmed when I first started diving into the underlying issues of stubborn fat and constant bloating I had for years. I wanted to get to the root of the problem but wasn’t sure I could commit to changing my ways. 
When I started learning more about how to reduce inflammation I was thrilled to realize it’s not difficult! I think the hardest part is that when you’re out shopping it can feel like 90% of products are processed and full of ingredients we can’t even pronounce. In other words, it’s not super hard to eat all these great, healthy meals but it can be hard to pass up all the processed, addictive stuff. I found that if I’m 85/15, 85 on and 15 less on all the time then I can feel really, really good. It’s neve all or nothing.
No deprivation, just showing up daily and working towards making the next healthy choice. Eating this way has left me with almost no bloating, reduced belly fat, overall weight loss, amazing sleep, and less cravings. 
Here’s a great day of eating and exercise when I want to reduce inflammation and burn belly fat: 
🏋️‍♀️ I choose a low impact 20-30 minute workout and don’t overtrain
🥣For breakfast I have gluten free oats with maple syrup, turkey sausage, and broccoli
🫑 For lunch I have chicken meatballs and air fried sauteed peppers
🍗 For dinner I have Kevin’s chicken with green beans
🥤 For a snack I’ll have a superfood shake with 0g of added sugar 
☕️ I’ll probably have a coffee in the morning and healthy dessert too! Lots of food, lots of flavor, and lots of fat loss.
